Nutrition and Dietetics Laboratory


The Food Analysis Laboratory is an actively used student research laboratory within the Istanbul Gelişim University, comprising the Faculty of Health Sciences, the Department of Nutrition and Dietetics, the School of Health Services, and the Department of Food Processing at the Vocational School. The laboratory, with a capacity of 25-30, conducts physical, chemical, and microbiological tests on foods to reinforce students' theoretical knowledge through practical applications. Additionally, in laboratory classes, students are provided with training in waste management discipline to raise awareness about the negative contributions and harms of laboratory waste to global warming. The Food Analysis Laboratory consists of separate sections, including a sample preparation room, a weighing room, a microbiology testing room, and a physico-chemical testing room. These sections allow students to learn and examine the entire process from taking a sample into the laboratory to interpreting the final analysis results. In other words, using the equipment within the laboratory, chemical, physical, and microbiological analyses are performed on various food products such as milk and dairy products, meat and meat products, fruits and vegetables, oils, etc., to determine the quality criteria of the products. In addition to basic glass and plastic materials, the laboratory utilizes equipment such as an incubator, vertical steam sterilizer, dry heat sterilizer, Elisa microplate reader, Elisa microplate washer, and microscopes for microbiological analyses. Furthermore, for physico-chemical analyses, equipment such as water baths, ash furnaces, protein distillation units, protein combustion units, distilled water apparatus, pH meters, precision scales, magnetic stirrer-heating plate, microwave oven, rotary evaporator, mantle heater, fast moisture determination device, water activity device, centrifuge, Gerber centrifuge, ultrasonic cleaning device, color determination device, spectrophotometer, and others are actively used.
